Harvested during the fall months of September and October, this honey draws from late-season nectar sources such as Goldenrod, Asters, Sunflower that produce a darker nectar. The result is a honey with deep amber to dark brown tones and a robust, earthy sweetness, often featuring caramel-like notes with hints of chocolate.
